Tripotassium citrate (INS-332ii)
Food additive in the category of antioxidants, also having acidity regulation, preservative, flavoring and sequestrant functions. It comes in the form of E 332(i) – monopotassium citrate or E 332(ii) – tripotassium citrate, these being potassium salts of citric acid. It is used in the quantities on the recipes in products based on milk, vegetables, fruits, emulsified or non-emulsified animal or plant oils and fats, partially or fully dehydrated milk, in fresh minced meat products.
