Fumaric Acid (INS-297)
Food additive with acidity regulator and stabilizer role. Can be obtained by heating malic acid, by catalytic oxidation of benzene or by bacterial fermentation of glucose. It is naturally found in some plants, being essential in cellular respiration of animal and plant tissues. It is used in wines, fine confectionery and pastry products, jelly-like desserts, instant powders for teas and fruit flavored beverages, fillings and icings for pastry products etc.
